Meribel Vegan Cake Recipe

My Meribel vegan chocolate cakes are rich, moist and deceptively easy to make! I like to enjoy them in the sunshine with a cup of tea taking in the Spring colours of my garden.

Ingredients: Cake

1 cup almond milk

1 tbsp apple cider vinegar

2 cups flour

1 ¾ cups sugar

¾ cup cocoa powder

2 tsp baking powder

1 ½ tsp baking soda

1 tsp salt

½ cup canola oil

2 mashed bananas

1 tbsp vanilla essence

1 cup boiling water


Set oven to 350o F/180oC

Mix almond milk and vinegar to curdle

Put flour, sugar, cocoa, baking powder, baking soda and salt in a large bowl and mix

Add the oil, banana, vanilla, and almond milk mixture and mix until smooth

Add boiling water slowly until combined

Divide between two circular cake tins or a fairy cake tin and bake for 30-35 minutes or until cooked

Ingredients: Chocolate 'buttercream'

1 cup cocoa powder

1 ½ cups vegan butter

4-5 cups icing sugar

2 tsp vanilla extract

¼ cup almond milk


Combine the cocoa powder and icing sugar in a large bowl

Add the butter, vanilla extract and almond milk and mix

Put the 'buttercream' into a piping bag and pipe soft peaks onto the top of the cake or fairy cakes
